Breakfast Muffins 3 ways

Muffins are the perfect grab and go option for busy mornings. Even if your not usually a breakfast person, those coffee shop muffins are always a temptation. However those sweet treats tempting you as you wait for your morning brew are usually far from a nutritious way to start your morning.

But I’m not one to want to miss out, so I created these three breakfast muffins with a difference. All vegan of-course, but also with a protein boost, higher in fibre, lower in sugars and each one with their own vitamin and mineral advantages to help get you fuelled for the day ahead.

Chocolate Breakfast Muffins

8 Muffins

Rich Chocolate chip muffins high in protein and fibre perfect to start the morning with a chocolate fix

Ingredients

  • 1 3/4 cup wholewheat flour
  • 2 tsp baking powder
  • 1 scoop protein powder
  • 1/4 cup cocoa powder
  • 1 tbsp maple syrup
  • 1 cup plant milk
  • 1/2 cup melted coconut oil
  • 2 flax eggs (1 tbsp ground flaxseeds with 3 tbsp water)
  • 1/4 cup dark chocolate chips

Directions

  1. Preheat over to 180c
  2. Mix all the dry ingredients together.
  3. Mix all the wet ingredients together in a separate bowl.
  4. Add the wet ingredients to the dry and mix well.
  5. Pour into muffin cases, then bake int he oven for 20mins or until cooked through.

“Blueberry

Ingredients

  * 2 cup wholewheat flour

  * 2 tsp baking powder

  * 1 scoop protein powder

  * 1 tbsp maple powder

  * 1 cup milk

  * 1/2 cup melted coconut oil

  * 2 flax eggs (1 tbsp ground flaxseeds with 3 tbsp water)

  * 1/4 cup frozen blueberries

Directions

  1. Preheat over to 180c

  2. Mix all the dry ingredients together.

  3. Mix all the wet ingredients together in a separate bowl.

  4. Add the wet ingredients to the dry and mix well.

  5. Pour into muffin cases, then bake int he oven for 20mins or until cooked through.

“Lemon

“Zesty


Ingredients

  • * 2 tsp baking powder * 1 scoop protein powder * 1 tbsp maple powder * Juice of 1 lemon * 1 cup milk * 1/2 cup melted coconut oil * 2 flax eggs (1 tbsp ground flaxseeds with 3 tbsp water) * zest 2 lemons

Directions

  1. Preheat over to 180c
  2. 2. Mix all the dry ingredients together. 3. Mix all the wet ingredients together in a separate bowl. 4. Add the wet ingredients to the dry and mix well. 5. Pour into muffin cases, then bake int he oven for 20mins or until cooked through.

Notes!!

Protein powder – I have a few protein powders I used with these recipes and they all work really well.
