Dan dan noodles and making tofu mince were both totally new so me last year, but wow I am in love with this dish. Its so full of flavour and super quick to make, and the texture of the tofu mince works surprisingly well.
This recipe also ticks so many nutritional boxes, with a wide variety of plant protein, fibre, healthy fats and a hefty dose of a spectrum of micro-nutrients it really does sit in my dream dishes.
