This is the chilli for when you just don’t feel like cooking. Although this isn’t strictly wholefoods it has saved me so many times when I’m run down , overly busy or just sick of cooking. It’s still super nutritious and filling but it only takes a few minuets to throw together.
I recommend this recipe to clients who are time short and struggling to get enough plant based iron and protein. The mixture of beans gives it a good amino acid profile especially when served with whole grains and the tomatoes make the iron from the beans more easily absorbed.
If your wanting to make this recipe even more nutrient dense try adding in some of these extras ;
- Kale
- Spinach
- Mushrooms
- Lentils
- Chickpeas
- Green beans
- Seed mix (as a topping)
- Nutritional yeast (as a topping)
“Lazy
Ingredients
* 1 can red kidney beans
* 1 can chopped tomatoes
* 1 can baked beans (whatever brand you like)
* 1 tsp smoked paprika
* 1 tsp dried onions
* 1 tsp dried garlic
* 1/2 tsp cayenne pepper
Directions
1. Dump all the ingredients into a large saucepan.
2. Mix and cook on a medium heat for 15-20 minuets
3. Serve with some fluffy brown rice or a jacket potato.

We have used this chilli recipe time and time again, when we are too tired to cook, just want something really warm and comforting or when we have been having to extreme budget. Aside from the spices all of these ingredients are easily available from supermarkets for under £1 total. It’s one of those dishes that really shines in showing how affordable a plant based diet can be.
