Mint choc chip was one of my favourite ice creams as a child, next to bubblegum of-course…. maybe something to do with the allure of bright colours; something that definitely plays a factor in my girls choosing of ice cream flavour. This ice cream however is made colourful with spirulina, an algae with a vast amount of nutritional benefits and my number one recommendation for those struggling with anemia. Although this recipe doesn’t have enough spirulina to make an impact on your diet it still makes a lovely Sunday Sundae treat without all the junk of your regular ice cream.
