Eating smashed chickpea sandwiches is a vegan right of passage. I remember when i first saw someone recommending smashed chickpea in a sandwich, and claiming it was a tuna maya substitute. It isn’t. BUT with the right seasoning it is soooo damn good.
The addition of avocado makes this sandwich deliciously creamy and gives the added benefits of;
