These spicy bean wraps are a simple high protein, high iron lunch, great for mid day energy boost. This wrap is easy to throw together and works great fresh at home or on to go.
- 4 wholewheat wraps
- 1 can red kidney beans
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- 1 clove garlic
- 4 handfuls spinach
- Add all the ingredients except for spinach to a small saucepan on a medium heat with a tbsp of water. Stir continuously and add more water if it starts to stick to the bottom of the pan.
- Fill the wraps with a handful of spinach each.
- Add the bean filling to the wraps warm if you are going to eat straight away OR leave to cool fully before adding to wraps for on the go.
