I really love multi cultural foods, growing up we were exposed to lots of different cultures foods. Growing up close to a city meant there was plenty of opportunity to explore different tastes. Even with food phobias I was open to many different flavours especially if they could be smothered with cheese; which is where my love of mexican inspired foods made with processed mock meats and topped with lots of melted cheese came from (skipping on the salad ofc)
Alot have changed from those days, one being I can enjoy the complex flavours of the spices WITHOUT having to smother than in cheese, and I also appreciate the natural protein in the nutrient powerhouses that are beans. Now I can really embrace the healing nutrition that can be paired with these flavours and this dish really is an in honour of that.
