Tofu Korma

I like to think of Korma as the gateway curry; you know when someone is dubious about trying curry for the first time (you know children or grandparents…) you manage to get them with a korma because its so mild.

This also makes Korma my comfort curry, it just feels all round gentler.

When I think of korma I am always transported back to eating my mums homemade korma with chunks of apple – I’m sure I complained about this at some point as a teenager with lots of food phobias, but now its become a fond memory and something I crave. This recipe in inspired by this korma, so its sweet and creamy with just that hint of warming spice.
