Vibrant Pea Soup

This pea soup recipe, is perfect in preparation for busy days. Its quick and simple to make, and it makes LOADS, meaning you can make a batch and have it ready and waiting to to grab for several future meals.

I would often make this up to help me keep my energy up after need feeds with my girls. It gave me the opportunity to eat something healthy without cooking over and over, its honestly a batch cooking dream.

  • 6 spring onions
  • 1 medium potato
  • 1 clove garlic
  • 12oz (350g) frozen peas
  • 1 1/2 pt (900ml) vegetable stock
  • salt and pepper (optional)
  1. Chop up all the onions, potato and garlic. Fry the spring onions in a large pan with 1tbp of water, (just to stop them from sticking) for around 5 minutes until softened. Add extra water if it starts to dry out 1 tbsp at a time.
  2. Add the potato and garlic and give it all a good stir. Fry for a further 5 minutes. 
  3. Now add all the peas and stock and bring to the boil.
  4. Simmer the mixture on medium heat for 15 minutes. Make sure the potatoes are soft and cooked through.
  5. Allow to cool before blending smooth with a submersion blender (With this amount of soup and submission blender is just alot more convinient, but feel free to use a normal blender if you wish, just make sure you dont overfill)
  6. Once completely smooth return the soup to the heat and serve bubbling hot.
